  • 1 top sirloin steak, choose from Small Split, to 0.6 to 1.0 lbs, Large Split, 1.1 to 1.4 lbs, and Whole Sirloin, 1.7 to 2.1 lbs, all approx. 1.25" thick, per steak
  • The top sirloin, or top sirloin butt, comes from a sub primal section of the loin, from the animal hindquarter
  • Tender and mildly marbled in the wagyu, it is the prized steak form the sirloin
  • Great grilled, pan-broiled, stir fried or broiled, serving 4 to 6 as a whole sirloin per steak
  • Due to the nature of raising pasture-raised cows, exact sizes will vary but you can expect at least a split small steak size of 0.6 lbs, a large steak of 1.1 lbs and a whole sirloin steak of 1.7 lbs
